The ceramic of your EGG is built to last a lifetime and requires very little maintenance. The more you cook, the darker the interior becomes: this is normal, and it only helps your EGG function better.
- Empty the ash before every cook. Separate the ash from the remaining charcoal with the ash tool, then remove it through the bottom draft door, ideally into an ash pan. A clean EGG maintains its temperature more easily.
- Perform a "burn-off" after cooking. Bring the EGG to approximately 300°C: food scraps and grease will burn away. For the convEGGtor, heat to 250°C until there is no more smoke.
- Do not try to "whiten" it. A sudden rise to very high temperatures is unnecessary and can crack the ceramic fire ring.
- Brush the inside of the dome from time to time with a wire brush or 80-grit sandpaper. Never use water or cleaning products inside.
- Wash the exterior with soapy water and a little black soap. It is easier when the EGG is still slightly warm.
- Prevent mold. If you are not going to use the EGG for a long time, leave the bottom draft door wide open and do not cover the top vent. If mold appears, a good fire will make it disappear.
- Cover your EGG once it has cooled down, if it is not kept under shelter.
