Two vents control the temperature: the rEGGulator at the top, the Draft Door at the bottom. The principle is simple, and you'll get the hang of it with practice.
The golden rule: more air = more heat. To lower it, close both vents slightly. To raise it, open them a little.
Two benchmarks. Opened to the thickness of a toothpick: perfect for low & slow. Almost wide open: pizza.
Keep them balanced. rEGGulator open by 1 cm = Draft Door open by 1 cm.
Go in small increments. Light it with everything open. Once the target is reached, adjust slightly and let the EGG react.
Aim from below. The ceramic retains heat very well: it is easier to raise the temperature than to bring it back down.
Don't panic. Adding food or a surface lowers the temperature. Don't open everything up: it will go back up on its own.
